You would be right. We do do things a little differently. And we’re pretty proud of that.
While most sodas are built around sugar syrups, artificial flavourings, and a whole lot of additives you can't pronounce, Good Sodas™ are born from natural fermentation. No shortcuts. No compromises. Just nature doing its thing.
We thought it was time we took you behind the scenes and share our fermentation process from start to finish.

Our fermentation process: a step-by-step breakdown

We think our fermentation process is pretty cool, but as you’ll find out, we can’t take too much credit. Most of the hard work is done by our Good™ friends — lactic acid bacteria.
That being said, we’ve put a lot of care into crafting the perfect recipe that lets the natural botanical flavours shine and delivers a refreshing sip from start to finish.1. We ferment organic fruit juice.
We start with organic fruit juice as the base for each soda. Good Cola™ and Good Orange™ start out as organic apple juice, and Good Lemon™ and Good Tonic™ use white grape juice.
By using organic fruit juice, instead of just mixing syrup with carbonated water, our sodas have more of the Good™ stuff.
Then, we add lactic acid bacteria to the fruit juice and let them get to work. The fruit juice and bacteria are left to ferment for two days. During this time, the bacteria convert the natural sugars from the fruit juice into lactic acid. This is where our sodas get their signature acidity and complexity.
Good to know: The lactic acid bacteria comes freeze dried in bags and only wakes up when we add it to the fruit juice.
2. We add the botanical flavours
Now we have our fermented fruit juice base, it’s time to add the flavour. And we don’t mess around when it comes to authentic flavours. We use only flavours from real botanical ingredients. That means fruits, herbs, and spices. Nothing artificial. Authentic ingredients mean authentic flavours.
3. The Good Sodas™ are packaged
Next, we bottle and can the sodas. Why do we have both, you ask? Generally, our cans go to stores where customers can stock up on Good Sodas™ to enjoy at home, while our bottles go to cafes, restaurants, and hotels.
4. Pasteurisation
We choose to pasteurise Good Sodas™ to ensure every sip is safe and shelf-stable.
Here’s why we pasteurize:
- It stops the fermentation at the perfect flavor peak.

It prevents the "exploding bottle" risk associated with unpasteurized fermented drinks.

It removes the need for artificial preservatives.
5. Good Sodas™ hit the road
The cans and bottles are packed into crates and loaded into trucks, ready to make their way to all of our Good™ Friends, here in Denmark and across Europe.
6. Good Sodas™ are ready to sip
Once the sodas reach their destination, they’re packed into fridges, onto shelves, and ready to be enjoyed.
Why we do, what we do
Isn’t it easier to just mix carbonated water and syrup together and call it a day? Sure. Faster and cheaper too! But that’s not what we’re about. We’re about making it Good™ and that means quality ingredient and quality processes. By taking the time to let our sodas naturally ferment using beneficial microorganisms, we get a soda with loads of benefits:
A clean label soda
Good Sodas™ are made with no artificial additives or preservatives. The lactic acid produced during fermentation, together with the pasteurisation, acts as a natural preservative, doing the job that synthetic additives do in conventional sodas. We keep it natural. We keep it Good™
A caffeine-free soda
Unlike kombucha, which is uses tea, our fruit juice-based soda is completely caffeine-free. Plus, unlike conventional cola, Good Cola™ is caffeine-free. We don’t use cola nut or add any stimulants. Crack one open at any time of the day, post-morning workout, mid-afternoon, or late-night with friends. All the flavour. None of the jitters.
An elevated flavour profile soda
The lactic acid produced during the fermentation process adds a complexity that you don’t get with conventional sodas.
