So, what is fermentation?
Fermentation is a process where microorganisms like bacteria or yeast transform sugars into other compounds. In our case, we use lactic acid bacteria (LAB)—the kind naturally found in many traditional foods. These helpful bacteria convert sugars into lactic acid, creating a flavorful, tangy soda that’s not only shelf-stable but uniquely refreshing.

This is the same kind of process used in foods like yogurt, sauerkraut, and sourdough. But here at Good Sodas, we’ve taken that traditional method and applied it to our craft: fermented soft drinks made with care, science, and organic grapes and Danish apples.
Why fermented soda?
Fermentation helps preserve the natural flavor of fruit and adds complexity that you just can’t fake. We ferment apple juice concentrate, which is naturally rich in polyphenols—compounds linked to anti-inflammatory and antioxidant effects. Through fermentation, we actually enhance the nutritional profile of the juice, while keeping sugar levels reduced. What makes fermentation unique?
We don’t use artificial flavorings or carbonation shortcuts. Every batch is brewed slowly, relying on the natural activity of lactobacilli to create depth and balance. Once fermentation is complete, we gently pasteurize our sodas to stabilize flavor and ensure safety, while preserving many of the beneficial compounds produced during fermentation.
Even after pasteurization, many of the organic acids, short-chain fatty acids, and bioactive compounds created by our fermentation process remain active. These include:
